brie with cranberries and pistachio nuts

Cheesy. Nutty. Full of tasty Berries. A spread that’s just as easy to make as it is delicious. Get your bread and crackers ready, because this recipe takes just 15 minutes — be sure to tag us @ratiofood when you share a pic of your spread on social!

INGREDIENTS

  • 1 round or wedge (8 ounces) Brie cheese (with herbs or plain)
  • 1/4 cup whole berry cranberry sauce
  • 1 tablespoon coarsely chopped pistachio nuts
  • Sliced baguette loaf or water crackers, if desired

STEPS

  1. Heat oven to 350°. Lightly brush round pan, 8x1 1/2 inches, or ovenproof plate with vegetable oil.
  2. Place cheese in center of pan. (Do not peel coating from cheese.) Bake uncovered 8 to 10 minutes or until cheese is soft and partially melted.
  3. Top cheese with cranberry sauce and nuts. Serve immediately with bread.

TIPS FROM OUR DIETITIAN

Tip 1: Not a cranberry fan but want that holiday pop of color? Swap pomegranate arils for cranberries and top with the roasted, lightly salted pistachios and a glaze of honey.

Tip 2: To keep carb count in check, consider a nut-based or seed-based cracker instead of the baguette to serve alongside the brie.
